Breaded breast of local grain fed chicken stuffed with duxelle of wild mushrooms served with a cognac mushroom sauce

Pork Picatta with organic lemons, capers in a Pinot Grigio sauce

Rosemary Crusted Chicken Suprême:

Suprême portion of local grain fed chicken crusted with rosemary and fine herbs

Pancetta wrapped pork tenderloin with a thyme and Port wine reduction

10 oz filet mignon (tenderloin of 28 day aged AAA beef)
